The Michelin Guide's Advice to a Young Chef in What is a Michelin Star? says as a first of three points "great cooking starts with great ingredients". This has been our core belief since 1982.

Similarly to the classic dressage, which is not a circus, but develops and emphasises the natural movements and tendencies of the horse, we focus on discovering and developing the natural inclinations of every person.


Wherever needed, we formally train and certify.

One of the skills of Ivor Jüchtern is to break a project into parts, each of which fits  precisely and exactly the skills and competences of a specific person. This way a crew of ordinary people performs like a winning crew.

We have so much experience, that we can afford to develop custom processes for every customer and situation.
